Consuming local produce is a way of protecting our heritage and defending all of our regions.
Beautiful, flavoursome new season potatoes from my market gardener;
and breast fillets from traditional corn-fed ducks:
such simple products, however, as we know, it often takes very little to make a feast.
New potatoes are fairly neutral tasting, which gives them the advantage of
easily adopting the flavours of the ingredients around them. This is why they go perfectly with
smoked duck breast and our pure rendered duck fat.
Hmmmm... so good!
