To prepare the marinade:
In a mixing bowl, combine the lemon juice and zest with the spices, chopped tarragon, salt and freshly ground pepper.
Add the Duck fat “La Délicate” Sublim’, and mix together well.
Place the drumsticks in an airtight container and leave to marinate for at least 3-4 hours, or overnight, or even for 2 days before cooking them.
Cook on the barbecue or under the grill in your oven. (Approx. 15 mins).
Suggestions:
Enjoy cold on a picnic, accompanied by the July quinoa salad for example…
Try swapping the tarragon for parsley or coriander.
For a variation on this delicious recipe, you could use organic virgin coconut “L’Exotique” Sublim’ instead of Duck fat “La Délicate” Sublim’, for a taste of the “exotic”!!!
