BEETROOT SPREAD

DUCK FAT.. “La Délicate”
The winter offers us richly coloured vegetables with subtle, fragrant flavours. Here is a delicious, colourful beetroot spread, with great flavour thanks to DUCK FAT "La Délicate" Sublim'. Both beetroot and DUCK FAT "La Délicate" Sublim' are recognized to have a number of healthy properties. This is guaranteed to please served with drinks, or as a starter!
Preparation : 15 minutes
Baking : 10 minutes

Cooked beetroot : 200 g
Onion : 50 g
DUCK FAT "La Délicate" Sublim' : 40 g
Lemon juice : 1/4 lemon
Fine salt : 2 pinches
Frozen basil : 2 tsp.
Toasted sesame oil

Préparation

Peel and slice the onion.
Sweat the onion with the DUCK FAT “La Délicate” Sublim’ in saucepan, covered, over low heat for 10 minutes.
Add the beetroot and transfer to a blender.
Add the salt, basil and lemon juice.
Blend to obtain a creamy texture, adding a few drops of toasted sesame oil.
Keep for two to three days maximum in the fridge in a jar or a small container with a lid.

Tip : Serve with vegetable crisps or bread, or… savoury scones.
