Mix together the flour and the wheat bran;
Add the baking powder, sugar and salt, then combine the powders;
Add the liquid Sublim’ “L’Exotique” organic virgin coconut oil and incorporate it into the powders using a spatula, or with your fingertips until you have a grainy mixture.
Add the cold water and mix in to form a paste;
Spread the dough between two sheets of parchment paper and leave to set in the refrigerator for at least 2 hours;
Preheat the oven to 180 °C;
Cut out the biscuits using a 6 cm cutter;
Bake for approx. 15 minutes, keeping a close eye: the biscuits must be lightly browned;
Leave to cool;
Melt the chocolate in a bain-marie or in the microwave;
Dip one side of the biscuits in the chocolate and then place the biscuits on a wire rack so the chocolate can harden;
You can also use the back of a fork or the flat end of a skewer to mimic the lines in Granola.
Suggestions: instead of T65 type strong flour and wheat bran, you could use wholemeal flour. Up to 6 g of baking powder can be added to the recipe: This will give an airier texture.
